"I have enjoyed many wonderful encounters throughout my career...
First, my apprenticeship in the restaurant, ’Aux Trois Caravelles’, on the banks of the river Oise in the Paris region. At the age of 16, I already knew that I would dedicate my life to gastronomy! With a professional baccalaureate under my belt, I developed an intense passion for exquisite cuisine, the true and authentic cuisine, the one I love, and the one that people love.
’Résidence Maxim’s’, with its mythical setting on the rue Royale is a restaurant devoted to exquisite feasts, not forgetting the prestigious events, especially during fashion week. Owned by Pierre Cardin, it embodied the art of French living. Then ’Le Clos Longchamp’ alongside Jean-Marie Meulien, a chef with two Michelin stars who once shared a little phrase with me that I will never forget: there is no noble product, the nobility of a product is fostered by the interest that one brings to it. ’Les frères Blanc’ and their numerous great Parisian brasseries. That’s where I learned that to be a good cook, you have to be close to your customers.

In 2011, I became a Director in Versailles. With my wealth of experience as a chef, today my job is to cultivate the alchemy between a team, a kitchen, a place and its customers.
